Whole Wheat Fiber Content

Hard Red Wheat has a fiber content of 6 grams per 1/4 C. WOW!!
Once the wheat is ground into flour it does loose some nutritional value. The best numbers I have found is that ground W.W. flour has 1 gram of fiber per Tablespoon. (if anyone has different info. let me know. )

If you haven't made cracked wheat cereal already, try this recipe and get he full benefits of the 6 grams of fiber in a 1/4 C.

Does Wheat REALLY last 30 years?

While I was at the Louisville preparedness fair I met a woman who told me that she had stored wheat in her basement, inside barrels. She had some water damage in her basement and so is in the process of replacing her wheat storage. She had first called the manufacturer where her wheat was purchased and they asked her to send in a sample of that wheat. The report came back that her 30+ year old wheat was perfect! YEAH

A Wheat What?

Wheat Berry- you may have heard this term used when searching around these great food storage blogs. It's even in a couple recipes, saying to add wheat Berry's. So what is that really?
The term wheat berry refers to the entire wheat kernel (except for the hull), comprising the bran, germ, and endosperm. Wheat berries have a tan to reddish brown color and are available as either a hard or soft processed grain.
Most recipes that say to add in the wheat berry, would more than likely mean a cooked wheat berry. Unless stated otherwise.

Using Wheat

Ever wonder what the heck to do with our Red Hard Wheat besides grind it up and make bread? Here is an idea or two for ya-
I take 2 cups of wheat and put it in my crock pot with 3 cups of water to start with. I add brown sugar, butter and a little salt. Let it cook, it will puff up into what's called a wheat berry.
I serve it for breakfast. Then I will take a cup and use it for my minestrone soup, it also goes in my chicken salad recipe!
But this is just one way you can make a easy, healthy, cheap meal and make it stretch. "I like that kind " (that was for you lynsi)
